Ecotourism In Bonito, Brazil

The state borders the country Paraguay to the south and Bolivia to the west. It is located within the Pantanal an ecological paradise of a total area of 230 thousand square kilometers right in the heart of Brazil. The Pantanal has the largest concentration of neo-tropical fauna, mammals, reptiles, and fish and it also serves as habitat for an enormous variety of native birds.
I am corresponding with a chap who is a regional inspector of the state of "Mato Grosso do Sul" ("Southern Thick Forest" – Portugese), Brazil who has been entreating me in his letters to take a holiday in his country, but one thing and another prevented my friends and I to travel to Brazil.. He praised his state which is famous for its natural beauty an enormous variety of flora and fauna, with forests, natural sand banks, savannahs, open pasture, fields and bushes. My good friend told me of his excursions around the state – "Few days after I was in Bonito, a small town, famous for its natural landscapes and attractions. We had nice experiences like being woken up by the cry of colorful birds upon the rising of the sun at dawn. I visited a cavern whose waters become blue when the rays of sun hit them; its walls were nesting places for macaws and the clear waters are the home to many different species of fish. Not very far from the town there is a high plateau, full of nature's creations, cascades and abysses – It is a beautiful region.
There are two ways to make a trip to Bonito – one is by a direct flight to the Bonito airport from San Paulo via Camp Grande or a cheaper way would be a 3 hour 253 kilometer bus ride from Campo Grande (quite a beautiful ride with interesting and beautiful scenic sites along the way).
Bonito is a large town in the area of Mato Grosso do Sul in the heart of eco-tourism in Brazil. Within the city are good shopping facilities, fine restaurants with the Brazilian taste and good entertainment and festivals. The optimum period to visit is between December and March, during the rainy season, with green vegetation, abundant food for the animals and rivers are high and the waterfalls are spectacular.
I took an interest in the brochures and learned of the ecotourism of Estancia Mimosa:
1) TRAILS AND WATERFALLS: The trails are along the forest bordering the Mimosa River and bypassing eight waterfalls of various shapes and sizes – there a trekker can find places suitable for swim under waterfalls or in natural pools. Other sites along the trail are small caves, suspended wood trails, a lookout to gaze at the wonderful scenery, a small boat ride and a 6-meter high diving board. It sounds like an unforgettable adventure.
2) BIRD WATCHING TOUR: Estancia Mimosa also offers a bird watching tour. The tour passes through areas of rainforest, open fields and hills, located in a region within the Cerrado biome, which has great environmental diversity of 190 bird species.
3) HORSEBACK RIDING: The route is through the Recanto Ecologico Rio da Prata, a typical ranch of Mato Grosso do Sul state. The tour passes through different environments of the farm: the open fields, small woods, nearby lagoons, up hills. At the end of the ride you will enjoy the approaching sunset while riding amongst the cattle, the wild animals and the birds of the region.

Note: Currently Estancia Mimosa doesn't offer accommodations for the night due to renovations. There are comfortable lodgings nearby with transportation to the site – reservations at these hostels can be arranged by your travel agent.
There are other options to view the ecological area of Mato Grosso do Sul. Bonito has a full range of hotels , catering from expensive five star resorts to back-packer budget accommodation. – one can reserve a room in the luxurious newly built La Paloma Residence.

Where should we stay on Medano Beach in Cabo San Lucas?
My partner and I have been researching beach resorts in Cabo and have narrowed it down to the Medano Beach area. It's our first trip to the area so we have no idea where is good and where is not. Would love some help 
What we are looking for:
1. A great pool with swim up bar if possible-
2. Great beach
3. Great food.
4. Romantic- for couple moreso than a kiddie hotel

All five of the resorts you have chosen are beautiful. My wife and I have been to all the Pueblo Bonitos and they have been incredible. I noticed you didn't mention Pueblo Bonito Emerald Bay. If you are considering Rose or Sunset I highly recommend Emerald Bay. The pools, views, and overall persona of the resort is simply amazing. Any time you re thinking mexico for a vacation. Think about saving money. There are so many crazy loop holes when traveling to Mexico. My wife and I have been renting timeshares for 8 years. We save anywhere from 40%-60% on our rooms for the week.
